Serving healthy food to your family is challenging, especially
when you are on a low budget. We have low cost meals for people
on a budget with cost saving ideas and budget recipes. They
are all healthy eating ideas and are cheap to prepare. Change
the recipes to suit your family's tastes and the ingredients
you have. Cutting costs on food doesn't mean you have to cut
on quality. It's still possible to prepare meals that not only
taste great, but are also good for you. |

Summer
is when men know how to cook - Many find barbecuing the most
enjoyable form of cooking, with its flexibility to be creative
with simple ingredients, and its relaxed, outdoor approach.
Simple cooking demands good quality ingredients. Barbecues imbue
food with a smoky flavour. This is caused by juices falling
from the food onto the coals (even if they're imitation) and
releasing smoke, which then flavours the food. |

BEEF
BURGERS
500
g lean beef mince
1 apple, grated (skin on)
1 cup fresh breadcrumbs
1/4 cup chopped parsley or coriander
2-3 spring onions, finely chopped
125g pouch Honey Soy Stir Fry Sauce
pepper to season |
Mix
all the ingredients together in a bowl. Shape into 6 burgers.
Barbecue over a moderate heat on a greased pan for 5 minutes
each side or until cooked to your liking.
Serve on top of grilled bread such
as foccacia and topped with grilled red peppers, apple
slices, lettuce leaves, mayonnaise and a sprinkling of
chopped fresh herbs. |

CORN
ON THE COB
Simply
pull back the husks and twist to form a handle, tie with
a strip of husk or some twine.
Remove the threads and brush lightly with oil, or season
with a chilli lime butter or other seasoned butter.
Place cobs on the grill and toast them till the kernels
are golden brown (don’t forget to turn them). |

GRILLED
VEGETABLES
1
red capsicum, cut into chunks
1 kumara, cubed
1 eggplant, cubed
2 zucchini, sliced
200g mushrooms, quartered
2 corn cobs, cut into 3cm pieces
1/4 cup olive oil
1 tsp Italian Herbs, Sea Salt, ground Peppercorns, |
Place
all the vegetables in a bowl. Add the oil and Italian
Herbs and season with Salt and Pepper. Mix until well
combined.
Barbecue for 12 -15 minutes or until cooked through and
golden. |

Serve
in buns with favourite toppings and maybe some potato
wedges on the side. |
HAMBURGERS
750g
mince
1 egg
3 spring onions, finely chopped
1/4 cup chopped fresh parsley or 1 tblsp dried
4 approx large gherkins, finely chopped
3/4 cup fresh wholemeal breadcrumbs
1/2 cup BBQ Sauce
8 Burger Buns |
Mix
all the ingredients together in a bowl. Shape into 6 burgers.
Barbecue over a moderate heat on a greased pan for 5 minutes
each side or until cooked to your liking.
Serve on top of grilled bread such

HOT
DOGS

-12 precooked beef sausages
1 cup mayonnaise
2 Tbsp prepared mustard
1 egg, lightly beaten
2 cups breadcrumbs
8 -12 metal skewers (or large bamboo skewers which have
been previously soaked in water for an hour) |
Spear
each sausage at one end with a skewer.
Combine the mayonnaise, mustard and egg and coat each
sausage (or use a pastry brush), then dredge in the breadcrumbs.
This is best done 5 -10 minutes prior to cooking.
Barbecue the hot dogs on the solid plate over a gentle
heat with a little butter or oil, until golden and hot
through.
Serve with tomato or barbecue sauce
and/or mustard. |

SCALLOPS
scallops
garlic
butter
white wine
black pepper |
Mix
up a little bowl of garlic butter, about 1 teaspoon of
garlic to 200 g butter.
Clean the scallops so only the orange and white parts
remain.
Give the scallop shells a good scrub and put two or three
scallops in each.
Place a small knob of garlic butter on top of scallops,
add a couple of tablespoons of white wine and a good grind
of black pepper.
Carefully place the shells on the barbecue grill and cook
for a few minutes only.
The scallop meat should just turn white and the butter
melt into the wine. |

SKEWERED
STEAK
500g
rump or sirloin steak
2 Tbsp Moroccan Seasoning
1 tsp oil |
Place
the Moroccan Seasoning on a sheet of waxed paper.
Cut the meat into 3cm chunks and thread onto skewers.
(If you use bambooskewers, soak them in cold water for
3 - 4 hours to prevent them from burning).
Brush the meat with oil, then roll in the Moroccan Seasoning.
Cook over a medium heat on a preheated barbecue until
the meat is golden brown and cooked to your liking.
Turn the skewers frequently while cooking. |
