BACON
WITH CABBAGE
2-3
slices bacon
1 large onion
1 head of cabbage
salt pepper |
In
a large dutch oven or frying pan, cook chopped up bacon
until almost burnt.
Add chopped onion and cabbage and stir until cabbage is
wilted.
Add enough water to cover. Bring to a boil. Cook until
most of the water is gone and cabbage is desired tenderness.
If need be, more water can be added. Add seasoning to
taste. |

Low-fat
meat.
Onions, herbs or salt to taste
Potatoes
Kumara
Puha, watercress, silverbeet, cabbage |
Choose
low-fat meat. Trim off fat. Boil meat, cool and scrape
off fat that sets, or pour off boiling water.
Refill the pot and heat to boil again. Add onions, garlic
or herbs for flavour instead of salt.
Add potatoes and kumara. Add puha, watercress, silverbeet,
cabbage. |

BUSCUITS
3
cups self-rising flour
1 can creme soda
Mix the two together and spoon into a skillet or dutch
oven. Bake until done. |

CAMP
COBLER
1/4
lb margarine
1 packet cake mix
1 cup brown sugar
1/2 cup instant tapioca
1 large can fruit cocktail
1 large can sliced peaches
1 small can crushed pineapple |
In
a 12 inch foil lined dutch oven combine the fruit and
tapioca.
Sprinkle cake mix evenly over top of fruit then sprinkle
brown sugar over cake mix and dab butter all over top
of brown sugar.
Place the lid on the dutch oven and bake for 45 minutes
to 1 hour.
Use 8 coals on the bottom of the dutch oven and 16 on
the top of the dutch oven.
Camp Cobbler is done when cake is brown on top and cake
has absorbed juices and is no longer dry. |

PASTA
500
gm lean mince
1 can tomato paste
1 pkt spaghetti pasta
1 jar spaghetti sauce mix |
In
a large pot heat water to a boil. In a smaller pot cook
the meat and add the sauce mix, water, and tomato paste
according to the instructions on the sauce package. Cook
the pasta in the water for 10 minutes. Place the lid on
the pot and with gloves drain the water from the pasta.
Putting the pot on a stump or log helps. Mix the sauce
with the pasta. |

potatoes sliced

onions sliced
10 oz cheddar cheese
salt and pepper to taste
4 tsp butter or margarine |
Take
a large square of heavy foil and grease it. Arrange sliced
potatoes on the foil,add salt and pepper and cover with
sliced onions. Add chunks of butter or margarine to potatoes.
Wrap and seal the foil.
Cook potatoes over hot coals on a grill until done 30
minutes depending on fire. Open foil and add thin sliced
cheddar strips to potatoes. Cover again and grill for
a couple of minutes until cheddar melts. |

CUPS SELF-RAISING FLOUR
2 TEASPOONS SUGAR
1 CUP MILK
1/2 TEASPOON SALT
3 TABLESPOONS BUTTER |
Mix
the flour, salt and sugar together in a bowl. Cut in the
butter till fine crumbs form. Add milk to make a soft
dough.
Knead lightly in the bowl until smooth
Shape into round loaf, rubbing a little milk over the
top. Put into an oil sprayed camp oven and put onto the
hot coals covering the lid with hot coals. Bake for 30
- 40 mins or until the loaf makes a hollow sound when
tapped. |

HOBO
PIE
Butter
4 carrots sliced
500g Mince
2 potatoes cubed
1 medium onion sliced in 1/4" pieces |
Form
hamburger patties out of the ground beef and put carrots,
sliced potatoes and sliced onions on top of a patty and
place on a sheet of aluminum foil. Brush the Pie with
butter and sprinkle with salt and pepper do this with
each patty.
Fold foil over Pie and place on charcoal or open fire.
Cook Hobo Pie for an hour turning every 15 minutes. |

PIZZA
BREAD
1
Package (6) Pita rounds.
1 jar prepared pizza sauce.
1 package shredded mozzarella cheese.
Any other toppings you like |
Place
pita bread on hot grill and toast to desired doneness.
Turn over, add pizza sauce, cheese and any other toppings
you desire. Grill till cheese melts. |

TRAIL
MIX
Make
a DIY trail mix ahead of time. It stores well, and is
great in a pinch. What's nice is it has a great mix of
protein and carbohydrates, so this should keep the kids
from having the sugar crash many snacks bring. |
In
a mixing bowl or large bag, combine the basics - peanuts,
raisins and M&M's - and shake. Some other fun additions:
dried cranberries, banana chips, cashews, almonds, pretzels,
Cheerios and granola. |

COOKING

The
beauty of foil cooking is that kids literally just
have to spray with non-stick spray (or you can use
non-stick aluminum foil), assemble and fold it closed.
Cut up the ingredients at the campground, or even
before you leave and keep them all in separate containers
in the cooler. It's also ideal to let each child create
his or her own foil food, so that each one can get
in on the fun. Or let all the kids make a big foil
wrap for the family to eat.

love to cook while camping, and a humble box of aluminum
foil is all the camp cooking gear they need. Use these

Foil
Roasted Veggies
If you think kids won't eat vegetables, you might be
surprised how they change their minds when the fun of
some foil and a campfire are involved. Pick their favorites
and add a couple others. Give them the diced veggies
and the foil, and let them have fun. Place closed foil
wrap onto campfire or camping stove, and cook for 30-45
minutes.
Campfire Foil Fries
Spray foil liberally, and spray cut potatoes lightly.
Place in center of large piece of foil, and sprinkle
seasoning like Old Bay on top. Close and roast over
fire or stove for 45 minutes.
Foil Apple Cobbler
Take sheet of foil and spray. Place several diced apples
inside, and add granola. For fun, toss in some caramel
or peanut butter chips. Close and roast for 20-30 minutes. |
