Cutting costs on food doesn't mean you have to cut on quality. It's still possible to prepare meals that not only taste great, but are also good for you.

Because it is the last thing people will remember about a meal, a dessert’s presentation is critical. The traditional desserts of New Zealand will bring personality to your sweet tooth, and make you feel as though you've found your way Down Under. Treat your guests to a variety of tasty treats from the land down under with these traditional New Zealand desserts (puddings).


BAKED RICE PUDDING
2/3 cup short-grain rice
1 tablespoon sugar
1 teaspoon vanilla essence
5 cups milk
Place all the ingredients in an ovenproof dish. Bake at 150°C for 2 hours, stirring a couple of times in the first hour.
Serve with canned or fresh fruit (choose canned fruit in juice).

FRUIT AND RICE PUDDING
1/3 cup short-grain rice
2 cups low-fat milk
1 tablespoon honey
1/4 cup dried apricots, chopped
1/4 cup sultanas
Preheat oven to 160 degrees. Put all ingredients in oven-proof casserole dish and stir to mix. Bake for 1 hour to 1.5 hours. Cook until the rice has absorbed most of the milk. Stir a couple of times in the first hour.

MICROWAVE CHOCOLATE PUDDING
60g butter
1 1/2cups self raising flour
1 cup sugar - 1/4 cup cocoa
3/4 cup milk - 2 tsp vanilla - 1 cup brown sugar
1/3 cup cocoa - extra - 2 cups boiling water
Place butter in microwave-safe bowl.Melt on high for 1 minute. Stir in sifted flour, sugar and cocoa, milk and vanilla.
Beat until smooth with wooden spoon. Either leave in bowl or transfer to suitable cooking to tableware bowl.
Mix extra cocoa and brown sugar together and sprinkle on top of mixture. Carefully pour water over mixture.
Cook on high for 12 minutes or until just cooked in centre. Stand for 5 minutes before serving.

MICROWAVE CHOCOLATE CAKE
2/3 cup short-grain rice
1 tablespoon sugar
1 teaspoon vanilla essence
5 cups milk
Place all the ingredients except the icing sugar in a large bowl. Beat well until the mixture is smooth but be careful not to overbeat the mixture. Spoon the mixture into an ungreased base lined 7 inch round by 3 1/2 inch deep microwave container.
Stand on an upturned plate and microwave for 3 minutes. Turn the container around and microwave for another 3 minutes.
Leave to stand for 5 minutes before turning it out. Leave to cool completely. Turn the cake out upside down and sift icing sugar over the top to decorate.

RICE PUDDING
1 pint milk
1 oz butter
4 Tbs castor sugar
4 oz short grain rice
pinch ground nutmeg
Grease a 2 pint pie dish and add rice, milk and sugar. Stir well and dot the top with the butter. Bake in the centre of a preheated 350 degrees oven for 2 hours. After the first hour sprinkle the top with the ground nutmeg and return to oven.
Serve the Rice Pudding with ice cream or whipped cream.

SLOW COOKER BREAD PUDDING RECIPE
About 4/6 slices of Spiced Fruit Bread, crust removed
2 cups milk - 4 eggs
1/4 cup sugar - 50 grms butter
1/2 tspn Vanilla Ess
1/4 tspn nutmeg
Place broken up bread in crockpot. In a bowl place other ingedients beat untill smooth. Pour over bread. Cover and cook on LOW for 3 hours.

SLOW COOKER CHOCOLATE FUDGE PUDDING
1 cup flour
1/2 cup brown sugar - 1/4 cup sugar
3 Tblspn Cocoa - tspn baking powder
1/2 cup milk - 50 gr melted butter
1/2 tspn vanilla essence
1 egg.
Mix the dry ingr., into a basin, add melted butter and van ess., and egg and stir to combine, pour into crockpot.
Mix together: 3/4 cup brown sugar, 1 3/4 cup hot water, 2 Tblpn Cocoa and pour gently over base.
Cook on HIGH about 2 hours or untill a toothpick comes out cleanly

SLOW COOKER RICE PUDDING RECIPE
4 cups milk
2/3 cup sugar
1/2 cup rice
2 eggs
1 tspn Vanilla Essence
Mix together thoroughly the milk, eggs, sugar, Van ess in the Slow Cooker. Cover, and cook on HIGH for 3 hours or on LOW for 6 hours, stirring occasionally. Serve warm.
